I’ve gone and done it…”What have you done?” You ask.
Well … I created Banana “Nut”ella Cake. Oh. Yes. I. Did!
It tastes like cake to me, but if you’d prefer to call it a brownie, I sure won’t argue. As long as you don’t eat it with out me!
Now let me step back a minute and confess:
This is not entirely “whole food”. BUT you can make it whole food with just a few minor changes.
- Replace store-bought Nutella (gasp!) with a copy cat version of Nutella
- Replace store-bought ice cream with homemade ice cream
Ingredients:
1/4 cup butter
1/3 cup sugar
1 over ripe banana
1 cup Nutella
1 egg
1 cup flour
Instructions:
Pre-heat oven to 350°
In a large mixing bowl cream together:
1/4 cup butter
1/3 cup sugar
1 over ripe banana
Add:
1 egg
1 cup Nutella
Mix batter until everything is well blended.
Add:
1 cup all-purpose flour
- Mix until the flour disappears into the batter. Scraping the sides as needed
- Pour batter into a 9 in non-stick baking dish
- Bake at 350 for 25-30 minutes
about 20 minutes into the baking, use a toothpick to check if cake is done - Cut and serve warm with ice cream. Easily serves about 6-8 people
There are several things I love about this cake:
- Nutella. No explanation required or needed
- The cake is light and fluffy
- The cake isn’t too sweet. You know how some fudge and brownies are so sweet you can only take a few bites. Yeah, me neither.
- The recipe is quick, easy and fun…The kids will love helping out in the kitchen with this recipe. They’ll even want to lick the beaters.
Other Ideas:
- Top with homemade whip cream
- Serve it with homemade vanilla or banana ice cream (heck have a scoop of each)
- Sprinkle with chopped hazelnuts
- Go really crazy and top the ice cream WITH homemade whip cream, sprinkled with nuts and served with bananas on the side…kind of like a Banana Nutella Chocolate Ice Cream Sundae Oh My Word…what have I just done 🙂
