Do you need real food ideas to jazz up egg salad?
I like egg salad when the eggs are still warm… On fresh, toasted, homemade bread with lots of mayonnaise. Not the healthiest way to enjoy egg salad but I buy organic eggs direct from the farm, where the chickens roam free and eat a non-GMO, grain free diet.
And, I make my own homemade bread with organic flours. I haven’t found the perfect bread but when I do, y’all will be 2nd to know….right after my husband. {grin}
I have tried homemade mayonnaise but haven’t perfected it yet. Feel free to use your favorite mayo. No judgement here. We are all at different stages of eating healthy. Practice makes perfect. Practice and determination make a habit.
Oh…and to let you in on a secret….I had to stop writing long enough to put eggs in a pot to boil. It’s egg salad for lunch.
Back to the healthy real food ideas:
- Add lettuce, tomatoes, sprouts, and cheese to an egg salad sandwich
- Replace the bread with your favorite leaf lettuce to create a healthy wrap
- Hollow out your favorite bell pepper (cut in quarters), add egg salad for another healthy option
- Cut the boiled eggs in 1/2 to make deviled eggs. Remove the yolks and follow the recipe below
Pipe the filling into egg halves to create a yummy snack or appetizer. Sprinkle with paprika and garnish with a wedge of avocado. - Use the avocado as a “bowl”. Cut an avocado in half and add egg salad to the inside.

Ingredients: (free printable 3×5 recipe card)
- 4 boiled eggs chopped (I always boil extra for lunches or snacks)
- 3 tbsp minced onion
- 1/2 stalk minced celery
- pinch of each; salt, black pepper, paprika, kale, turmeric, garlic
- ¼ cup Greek yogurt
- ¼ cup homemade mayonnaise (or your favorite blend)
- toasted bread slices or crackers
- 1 thinly sliced avocado
Instructions:
- In a medium sized bowl (refrigerator safe) add the chopped eggs, onions, celery, all the seasonings, yogurt, and mayonnaise
- Mix well until all the ingredients are incorporated
- Top a slice of toasted bread with the egg salad and sliced avocado
- Serve with your favorite soup or salad
There’s a lot of versatility in egg salad. My favorite way to eat egg salad is like I did today. Lunch was warm egg salad topped on homemade bread. It hit the spot. Hope y’ll enjoy it too.
